Tired of the same-ol’, same ol’ tuna casserole? Is your family threatening to mutiny? Is the cat the only member of the household happy to see a can of tuna unpacked from the grocery bags? Dreamy, Creamy Tuna with Tarragon will fix everything! Everyone in our house LOVES it, and often has seconds. Except for the cat, much to his dismay. (So NOT getting him in the habit of begging!) This is Pookie Cat, not happy with my decision——>
Anyway, distract/bribe your cat with a catnip toy and assemble these ingredients.
- pasta of your choice, prepared according to package directions (I used dried egg noodles)
- 1 small onion, chopped
- 1 TBSP oil
- 2 TBSP butter
- 2 TBSP flour
- 1 1/2 cups chicken broth or stock
- 1/2 cup cream or half and half or whole milk
- 1 TBSP Dijon mustard
- 3-4 sprigs fresh tarragon, chopped or 1 TBSP dried tarragon leaves
- 2 five-ounce cans tuna, drained and flaked with a fork
- 1 cup frozen peas
- salt and pepper to taste
~Start your pasta water boiling and prepare pasta according to package directions. Drain and set aside.
Add oil to a large fry pan set over medium-high heat. When it shimmers and you can smell it, add chopped onion and saute until soft, 3-5 minutes.
Add butter. When butter is melted add flour, this creates a roux that will thicken the sauce. Stir and cook until flour bubbles–ensuring the flour is cooked and will not add a raw taste to the sauce.
Whisk in chicken stock. Cook 5 minutes, stirring occasionally.
Add cream and Dijon mustard. Bring the sauce to a boil, continue stirring occasionally. Reduce heat to low.
Pour sauce over pasta and stir to coat. Serve and wait for the compliments!
